Can I safely delete the routes part of the database without causing a problem?
I do not Auto-Populate the route data and wonder if I can speed up the startup.
If the answer is yes, how do I do it.

About the only way I can think of Keith is to delete your Navdata altogether then download a new one but untick the routes table so that it does not download. You will need to update your Navdata each time using this method. It may save a few seconds but no real idea whether it will.
You will also need to ensure that you have Auto-populate route data unticked to stop the routes of everything you pick up being populated
